Living in Singapore and eating at the hawker centres has given me a taste for the local homemade iced lemon tea. It's good, light and refreshing, sometimes it can bea little bit too sweet, but still it's good. So good that I decided to try to make my own little homemade version (I took some inspiration from the Hong Kongese version); not to compete with the aunties, but just to have it when I want it here at the house (with less sugar and a bit more natural).
Ingredients: (measurements for a 1 litre container)
Juice of 1-2 lemons
3-6 tablespoons of honey
7-10 Black Tea Leaves/Black Tea bags (e.g. Lipton Yellow Label Tea or any English Breakfast, Earl Grey and Darjeeling tea)
4-4 1/4 cups water
Instructions:
Boil the water and pour over the tea leaves/tea bags
Leave the tea leaves/tea bags in the for 10-15 minutes
Strain the tea leaves/tea bags afterwards and leave the tea aside to cool
Squeeze the lemon/s and add the juice to the tea
Add 3-6 tablespoons of honey
Mix everything together
Place the iced lemon tea in a container and leave it in the fridge to chill

Drink whenever desired (best with ice of course!)

An Important Thing to Note When Using Tea Leaves & Tea Bags:
DO NOT squeeze or press down on the tea leaves/tea bags, this crushes the leaves and releases tannin, a compound in most teas (black teas tend to have larger amounts of tannin), it's not bad for the health, it will just make the tea taste bitter. So if you don't want your homemade iced lemon tea to be bitter, don't press down/don't squeeze. :)
*you can switch lemons for oranges or even pineapple, just have fun switching things up
*you can add some peppermint to give the iced lemon tea a refreshing and cooling flavour
*you can also add other herbs like sage, rosemary, lemon balm, cinnamon or ginger; experiment with different herbs to come up with new tastes and flavours for your iced tea
*adjust the ingredients to suit the taste desired
